Polenta Tomatoes Egg

i made this after having polenta the previous night and frying up the leftovers.  to the fried polenta i added some lightly fried tomatoes (similar to what you’d find on an english breakfast), some fresh goat cheese and a fried egg. this was really good. the fresh goat cheese was more mild than the harder goat cheese you’re used to getting at the store. it was essentially the goat cheese version of ricotta with a stronger taste than sheep’s milk ricotta but a milder taste than cured goat cheese. it was an excellent breakfast.
