Girolle Risotto

I found some really fresh girolle mushrooms (chantarelles) at the market. Instead of using vegetable or chicken broth for the risotto, I bought some creamy vegetable soup and watered it down (about 50/50) and used that instead and then followed the standard mushroom risotto recipe. This was excellent – maybe the best mushroom risotto I’ve ever made. I look forward to making the same thing in Italian with fresh porcini mushrooms.
