Cooking Class with Claudio

This is a shot of the preparation of one of the dishes we made at our cooking class with Claudio (Hans and I). Here you see anchovies being prepared for the popular local dish of anchovies under lemon and olive oil. At the top are the fresh anchovies, on the left are the anchovies with spines removed and on the right are the spines. You marinate the anchovies under lemon juice and olive oil for about a half hour and boy are they good. If you think anchovies are those salty canned things you find in the US, you should try these when you visit Italy. They are otherworldly.
